# Directions:
01 - In a large bowl, combine ground beef, breadcrumbs, egg, Parmesan, garlic, parsley, salt, and pepper. Mix gently until just combined. Shape into 16 to 18 meatballs, about 1 tablespoon each.
02 - Heat 1 tablespoon olive oil in a large deep skillet over medium heat. Add meatballs and sear until browned on all sides, about 5 to 6 minutes. Remove meatballs and set aside.
03 - Add remaining olive oil to the skillet. Sauté onion and diced bell pepper for 3 minutes until they begin to soften.
04 - Stir in crushed tomatoes, tomato passata, dried Italian herbs, sugar, salt, and pepper. Bring mixture to a gentle simmer.
05 - Add short pasta and water or chicken broth. Mix well, then return meatballs to the skillet, nestling them into the sauce.
