This is one of my favorite winter desserts to serve at holiday gatherings because it feels elegant yet is easy to prepare.
Ingredients
- Fruit: 2 ripe persimmons (Fuyu or Hachiya), peeled and sliced , 2 ripe pears, peeled, cored, and thinly sliced , 1/3 cup pomegranate seeds
- Mascarpone Cream: 1/2 cup mascarpone cheese , 1/2 cup heavy cream , 2 tbsp powdered sugar , 1/2 tsp vanilla extract
- Garnish: 2 tbsp shelled pistachios, chopped , Fresh mint leaves (optional) , Zest of 1 orange
Instructions
- Step 1:
- In a medium mixing bowl, combine mascarpone cheese, heavy cream, powdered sugar, and vanilla extract. Whip with a hand mixer or whisk until light and fluffy.
- Step 2:
- Arrange persimmon and pear slices artfully on a serving platter or individual plates, slightly overlapping for a snowscape effect.
- Step 3:
- Dollop or pipe the mascarpone cream over the fruit, evoking patches of fresh snow.
- Step 4:
- Sprinkle pomegranate seeds and chopped pistachios over the top.
- Step 5:
- Finish with a sprinkle of orange zest and fresh mint leaves, if using. Serve immediately.
